I was out to lunch the other day with friends and we decided to give Bajio a try. Some in the group had been there before, but for most of us, it was a new experience.
For me, it was a little bit like going to a Subway restaurant, only Mexican style. Someone mentioned that is was a little like another place called Q'Doba, but I had never been to a restaurant quite like this before.
Bajio is a fairly new restaurant in Spokane. It is located on Division street in a small outdoor plaza, across the street from Northtown Mall. I was actually surprised to learn that Bajio is a franchise operation and that there are Bajio restaurants in other cities and states throughout the west. I didn't know any of this until I looked them up on the internet.
All in all, eating here as a pleasant experience. The food was fresh tasting and we all enjoyed our lunch.
The portions were generous and there really is a grill. They make and arrange your food on the plate while you observe and tell them what you would like or not like on your order.
One of the features they offer is a $5.00 special for lunch. Each day there is a different "special" you can get. For example, on Wednesdays, you can order a taco, 2 sides and a drink, for
$5.00.

What did we order? We ordered things like enchiladas, shrimp and pineapple, fish tacos, nachos, and other things with rice and beans. We enjoyed the spicy jalapenos, pico de gallo and mango salsa too.
